An easy family recipe that will stop you reaching for the takeaway menu. Simply adjust the toppings depending on what you've got in the cupboard.


Ingredients

Onion
1 small, sliced into wedges

1 teaspoon(s), level
Olive Oil

Skimmed Milk
1 tablespoon(s)
Passata
100 g
Capers, in Brine
1 teaspoon(s), drained
Olives, in Brine
10 g, drained and chopped
Cherry Tomatoes
50 g, halved
Basil, fresh
10 leaf/leaves
Chilli flakes
½ teaspoon(s), level
Half fat Cheddar cheese
75 g, grated
Salad leaves
4 portion(s), to serve
Instructions

Mist a frying pan with the cooking spray and add the onion. Fry, stirring, for 10 minutes until softened. Transfer to a plate and clean the pan.

Sift the flour into a bowl with the baking powder and a pinch of salt. Stir in the olive oil, milk and enough water to make a soft dough. Roll out on a work surface, dusted with flour, to make a 23cm (9in) circle.

Mist the pan with cooking spray and slide in the dough. Fry for 5 minutes. Turn and cook for a further 5 minutes. Remove from the heat.

Preheat the grill to high. Spread the passata over the pizza and top with the onion, capers, olives, tomatoes and basil. Scatter over the chilli flakes and WW Reduced Fat Grated Mature Cheese.

Grill for 5–8 minutes, then slice into 4 and divide between 4 plates with the salad.
