Mix together yeast, salt, honey, and water until the yeast is dissolved. Stir in 100ml of oil and then gradually add flour. Knead into a smooth dough for 5-10 minutes. Let the dough rise, covered, for about 1 hour.

Grease a baking sheet (approximately 30x40 cm) with 1 tablespoon of oil and press out the dough. Let it rise, covered, for an additional 30-40 minutes.

Preheat the oven to 200°C. For the decoration, halve the tomatoes and slice the onion. Cut five rings from the tip of the bell pepper. Pluck the leaves from the parsley. Slice a piece of the green part of the leek.

Press your fingers into the dough to create small dimples, and brush 1 tablespoon of oil over the top. Arrange the parsley leaves to form a tree shape. Place the tomato halves with the cut side up on the parsley and arrange the onion slices to create garlands. Position the bell pepper rings in the shape of a Christmas star at the top of the tree. Place the leek at the bottom of the tree as the tree trunk.

Top the focaccia with flake salt and bake in the lower part of the oven until it's golden, about 20 minutes.
