Ingredients

Ground Almonds

50 g

Cocoa Powder

4½ tablespoon(s), level

Banana

2 medium, very ripe

Egg, whole, raw

2 medium, raw

Light Brown Sugar

1 tablespoon(s)

Fat Free Natural Yogurt

80 g, to serve

Cocoa Powder

4 teaspoon(s), level, to serve

Instructions

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Put the ground almonds, 4 tablespoons cocoa powder, the very ripe bananas and eggs in a food processor and blitz until smooth. Divide between 4 x 200ml ramekins and put on a baking tray.
  2. Mix ½ tablespoon cocoa powder with the light brown soft sugar and sprinkle over the puddings, then pour 25ml boiling water over the top of each. Bake for 20 minutes, until the sponge springs back when lightly pressed.
  3. Spoon 1 tablespoon fat-free natural yogurt onto each pudding, then sprinkle over 1 teaspoon cocoa powder among the 4 puds to serve.
