These Mexican toasted wraps make great family dinners.


Black beans in water

1 can(s), large, drained

Red onion

1 small, thinly sliced

Ground Cumin

½ teaspoon(s), level

Coriander, fresh

2 tablespoon(s), roughly chopped

Lime Juice, Fresh

25 ml

Light feta cheese

150 g

WW Wholemeal Wraps

  1. Put the black beans in a large bowl with the onion, ground cumin, coriander and lime juice. Crumble in the feta cheese, then gently mix to combine everything and season to taste.
  2. Lay the tortilla wraps on the work surface and spoon half the filling over each one. Top with 2 more wraps, then press gently together.
  3. Mist a frying pan with calorie controlled cooking spray and put over a medium-high heat. Add the quesadillas one at a time and cook for 3-4 minutes. Mist the top with more cooking spray, then flip over and cook for 3-4 minutes on the other until golden. Quarter and serve.
