Feta & black bean quesadillas
Biona Organic Black Beans in Water
1 can(s), drained, drained and rinsed
1 small, thinly sliced
½ teaspoons, level
2 tablespoons, roughly chopped
Lime Juice, Fresh
Light Feta Cheese
Tesco Wholemeal Tortilla Wraps
4 individual, halved
Calorie controlled cooking spray
- Put the black beans in a large bowl with the onion, ground cumin, coriander and lime juice. Crumble in the feta cheese, then gently mix to combine everything and season to taste.
- Lay the tortilla wraps on the work surface and spoon half the filling over each one. Top with 2 more wraps, then press gently together.
- Mist a frying pan with calorie controlled cooking spray and put over a medium-high heat. Add the quesadillas one at a time and cook for 3-4 minutes. Mist the top with more cooking spray, then flip over and cook for 3-4 minutes on the other until golden. Quarter and serve.
