Ingredients
Courgette
150 g
Egg, whole, raw
2 medium, raw
Light Mozzarella
100 g
Biona Organic Coconut Flour
30 g
Salt
½ teaspoon(s)
Green Pesto
2 tablespoon(s), level
Cherry Tomatoes
100 g
Spinach
50 g
Basil, fresh
5 leaf/leaves
Parmesan Cheese
1 tablespoon(s), grated, shaved

Preheat the oven to 200°C, fan 180°C and gas mark 3. Wash and grate the courgette, place in a kitchen towel and squeeze out excess liquid. Whisk the eggs and mix with the courgette, mozzarella, flour and salt to form a dough.

Spread the dough around the edge of a 30cm pizza baking tray and bake in the oven on the middle shelf for approx. 20 minutes. Allow the pizza base to cool briefly, spread with the pesto and top with the tomatoes, spinach, basil and Parmesan.
