- In a small bowl, mix together the hot chocolate powder, cocoa and ginger, then add just enough milk to form a smooth paste. Once the paste is smooth, stir in enough milk to reach a pouring consistency.
- Use the side of a knife to crush the cardamom pods open, then snap the cinnamon stick into a few pieces. Put into a pan with the peppercorns, the chocolate mixture and the rest of the milk.
- Put the pan over a very low heat and warm slowly until the milk is steaming, but not boiling or bubbling. Strain into mugs and serve with the small cinnamon sticks (if using).
