- Using a food processor, process all ingredients, except the extra coconut, until well chopped and evenly combined. Transfer to a sheet of baking paper and press out until 3cm thick. Freeze for about 30 minutes or until firm.
- Lay another sheet of baking paper on top and use a rolling pin to roll out to a 7mm thickness. Cut out heart shapes with a small heart-shaped cutter (about 4cm at widest part across). Reroll scraps of mixture and keep cutting until all the mixture has been used. Sprinkle on extra coconut and press on lightly.
- Place in an airtight container in single layers between sheets of baking paper and seal tightly. Keep in the freezer for up to 3 months, taking out single serves as required.
