Chipotle & lime prawn salad
Waitrose Cooks' Ingredients Chipotle Paste
Sweetcorn, frozen, boiled
Chilli, Green or Red
1 individual, green
Lime Juice, Fresh
Calorie controlled cooking spray
- Lightly mist a large nonstick frying pan with cooking spray and heat over medium-high heat. Cook prawns, stirring frequently, for 3 minutes or until almost cooked through. Add 3 teaspoons chipotle paste and cook, stirring, for 1-2 minutes or until prawns are cooked through. Transfer to a plate and wipe the pan clean.
- Lightly spray the same pan and heat over a medium-high heat. Cook the sweetcorn, chilli and tomatoes, stirring, for 5 minutes or until tomatoes soften. Return prawns to pan with lime juice and stir to combine. Remove from heat and stir in the avocado, coriander and remaining chipotle. Serve.
