This tasty, Cajun-style chicken dish is perfect for relaxed, informal eating.

Ingredients

Brown Rice, dry

300 g, long grain

Vegetable Oil

2 teaspoon(s)

Chicken breast, skinless, raw

450 g

Celery, cooked

3 stick(s), sliced

Onion

1 large, chopped

Chilli Powder

¼ teaspoon(s), level

Peppers, all types

1 medium, deseeded and chopped

Discovery Foods Deep South Cajun Spice Mix

10 g, (2 tsp)

Salt

1 pinch, and freshly ground black pepper

Paprika

¼ teaspoon(s), level

Oregano, Dried

½ teaspoon(s), level

Ground Cumin

½ teaspoon(s), level

Coriander, Dried

½ teaspoon(s), level

Thyme, Fresh

1 sprig(s), or 1 tsp dried thyme

Tomato

4 medium, chopped

Instructions

  1. Cook the rice in plenty of boiling, lightly salted water until tender, about 12 minutes.
  2. Meanwhile, heat the oil in a large non-stick frying pan or wok and add the chicken. Cook, stirring, for about 6-8 minutes, until browned all over. Add the celery, onion, green pepper and garlic. Cook for about 3 more minutes, stirring often, until the vegetables are softened slightly.
  3. Add the chilli, paprika, cumin, coriander, thyme and tomatoes. Cook gently, stirring occasionally, for a further 5 minutes.
  4. Drain the rice thoroughly, then add it to the frying pan or wok, stirring well to mix everything together. Season with salt and pepper, then serve.
