Adding chicken and bread to this popular tomato and mozzarella salad makes it a meal in itself

Chicken breast, skinless, raw

Premium White Bread

Green Pesto

2 tablespoons, level

Lemon Juice, Fresh

  1. Mist a large nonstick frying pan with the cooking spray and put over a medium heat. Add the whole chicken breasts and cook, turning often, for 10-12 minutes or until cooked through. Transfer the chicken breasts to a plate.
  2. Meanwhile, toast the bread until golden. Set aside for 2 minutes to cool and then tear into bite-size pieces. Combine the pesto and lemon juice in a small bowl.
  3. Slice the chicken thickly. Arrange the tomato and mozzarella on plates and top with the chicken and bread pieces. Drizzle with the pesto dressing to serve
