You could also make this into individual pies, but we think one big show-stopping pie is far more spectacular

Mushrooms
300 g, sliced
Worcestershire Sauce
1 teaspoon(s)
Half Fat Crème Frâiche
200 g
Cornflour
2 teaspoon(s), level, with 4 tsp cold water
Filo Pastry
4 sheet(s), large
Roast turkey, skinless
300 g, shredded
Cranberry Sauce
4 teaspoon(s)
Red onion
150 g
Brussels sprouts, boiled
150 g
Carrots, boiled
150 g
Parsnip, raw

Instructions

Mist a large nonstick frying pan with cooking spray and fry the mushrooms over a medium heat until soft. Season with black pepper and stir in the Worcestershire sauce, crème fraîche, and cornflour paste. Cook, stirring, for 1-2 minutes, until thickened. Transfer to a bowl to cool.

Preheat the oven to 180°C, fan 160°C, gas mark 4. Mist a 25cm pie dish with cooking spray, and arrange 2 sheets of filo over the base, allowing the excess to hang over the edge of the dish. Layer the shredded turkey meat over the filo and dot with the cranberry sauce. Arrange the roasted veg on top and spoon over the mushroom sauce.

Top with the remaining filo, then scrunch up the excess pastry to form a thick rim.

Mist the pie with cooking spray and bake for 35-40 minutes, until the pastry is crisp and golden and the filling is piping hot. Cut into quarters to serve.
