Ingredients

0% fat natural Greek yogurt

1 tablespoon(s)

Tomato ketchup

½ tablespoon(s)

Smooth Mustard

1 teaspoon(s), level

Pickled gherkins, no added sugar

1 medium, drained, half diced, half sliced

Shallots

¼ medium, diced

Calorie controlled cooking spray

Wholemeal tortilla wrap

1 medium

Lean beef mince, 10% fat, raw

100 g

Half fat Cheddar cheese

20 g

Lettuce

1 handful serving, shredded

Instructions

  1. In a small bowl, stir together the yogurt, ketchup and mustard, add in half the diced gherkin and the diced shallot. Season, then set aside.
  2. Press the beef on to the tortilla, spreading in a thin layer to cover the tortilla, season with salt and pepper.
  3. Mist a nonstick frying pan with cooking spray and heat over a medium high heat. Add the tortilla, beef side down. Cook for 5 minutes, until the meat is cooked through.
  4. With a wide spatula, carefully flip the tortilla over and place the cheese on top of the beef. Cook covered for 1-2 minutes, until the cheese has melted.
  5. Remove from the pan, and spread the sauce over the cheese and later with the gherkin slices and the shredded lettuce.
