Best ever roasties

Roasties are hands-down the best part of a roast dinner. These are fluffy on the inside with a crunchy outside!


Ingredients
Potatoes, Raw
1500 g, red skinned
Olive Oil
3 tablespoon(s)

Preheat the oven to 220°C, fan 200°C, gas mark 7. Peel and halve 1.5kg Desirée potatoes, then put in a large pan and cover with cold water.

Bring to a boil then reduce the heat and simmer for 10-15 minutes or until just tender. Drain. Return the potatoes to the pan and set over a low heat for 2-3 minutes, or until any remaining water has evaporated. Cover with the lid and shake the pan to ‘rough up’ the surface of the potatoes.

Drizzle 3 tbsp olive oil over the base of a large baking dish then heat in the oven for 5 minutes.

Add the potatoes to the dish and, using tongs, turn to coat in the hot oil. Roast for 1 hour 15 minutes or until crisp and golden. Season and serve.
