Beef satay with sweet & sour salad

This Asian-inspired beef satay dish is a huge hit. The strips of steak are marinated in lime and honey, then griddled and served with a delicious peanut sauce.


Ingredients
Beef fillet steak, lean, raw
250 g
Honey
2 teaspoon(s), level
Chilli, green or red
½ individual
Lime
1 medium, wedges
Crunchy Peanut Butter
30 g
Root Ginger
5 g
Garlic

Sweet Chilli Sauce
½ tablespoon(s)
Soy Sauce
½ teaspoon(s), tamari
Thai Fish Sauce
¼ teaspoon(s)
Coconut water
25 ml
Caster Sugar
1 teaspoon(s)
White Wine Vinegar
2 teaspoon(s)
Cucumber
¼ serving(s),
Lettuce
1 individual, shredded
Radish
75 g
Spring Onions
2 medium, sliced
Coriander, fresh

Mix all the satay sauce ingredients together and season to taste. Put the beef strips flat in a dish and spoon over x of the satay mixture (put the rest in a small serving bowl). Turn to coat and set aside until ready to cook. Dissolve the caster sugar with the vinegar in a large bowl for the salad and add the cucumber. Cover and set aside. Soak 12 wooden skewers in warm water.

When ready to eat, line a grill pan with foil and get the grill really hot. Thread the beef onto the soaked skewers. Place on the grill pan and drizzle with 2 tsp of the honey. Grill for x minutes then turn and drizzle with the rest of the honey. Grill for another x minutes.

Add the rest of the salad ingredients to the cucumber and serve with the beef skewers and satay sauce.
