1 teaspoons, grated
2 medium, trimmed and sliced

Beef sirloin steak, lean, raw
175 g, sliced
10 leaf/leaves, roughly torn
- Heat the beef stock and ginger in a large pan until boiling. Add the bean sprouts, spring onions, chilli, noodles and fish sauce and return to the boil.
- Reduce the heat, then add the steak and pak choi. Simmer for 1–2 minutes until the steak is just cooked. Divide the pho between 2 warm bowls, scatter the basil over and serve with the lime wedges for squeezing.
