Root Ginger

Beansprouts

Spring Onions

2 medium, trimmed and sliced

Chilli, green or red

1 individual, deseeded and finely chopped

Amoy Straight to Wok Rice Noodles

100 g

Thai Fish Sauce

Beef sirloin steak, lean, raw

175 g, sliced

Pak Choi

1 portion(s)

Basil, fresh

10 leaf/leaves, roughly torn

Lime

1 medium

Heat the beef stock and ginger in a large pan until boiling. Add the bean sprouts, spring onions, chilli, noodles and fish sauce and return to the boil.

Reduce the heat, then add the steak and pak choi. Simmer for 1–2 minutes until the steak is just cooked. Divide the pho between 2 warm bowls, scatter the basil over and serve with the lime wedges for squeezing.
