A super-simple all-in-one dish with tender spicy cod and lots of colourful veg.

Ingredients

Sweet potato, raw

600 g, skin on, cut into thin wedges

Red onion

2 medium, cut into wedges

Red pepper

2 medium, pointed, deseeded and cut into wedges

Cod, raw

4 fillet(s), medium, loins

Morrisons Piri Piri Sauce

50 g

Ground Cumin

1 teaspoon(s), level

Paprika

1 teaspoon(s), level

Thyme, Dried

1 teaspoon(s), level

Olive Oil

1 tablespoon(s), extra virgin

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6.
  2. Put the sweet potato, onions and peppers on a large baking tray. Add the cumin, paprika, thyme and olive oil, season to taste and gently toss everything together to coat. Roast for 40 minutes until the sweet potato is just tender.
  3. Put the cod on a small plate and pour over the Spicy Piri Piri Sauce, then toss gently to coat the fish. Arrange the cod on top of the vegetables and roast for a further 10-12 minutes until the fish is cooked through, then serve.

Notes

To check the fish is cooked through, break off a small piece from one of the loins with a fork. The flesh should easily break into flakes and be opaque all the way through.
