Baked apples with forest fruits & frozen yogurt

The combination of the soft, warm apples and berries withthe cold frozen yogurt makes this fruity dessert irresistible

Ingredients

Low Fat Natural Yogurt

200 g

Artificial sweetener

2 tablespoon(s)

Vanilla pod

1 individual

Aldi Four Seasons Black Forest Fruits (Frozen)

250 g

Mixed Spice

¼ teaspoon(s), level

Instructions

  1. First, make the frozen yogurt. Put the yogurt and sweetener in a small bowl. Cut the vanilla pod in half lengthways, scrape out the seeds from one half and stir them into the yogurt. Transfer to a sealable container, put the lid on and freeze for at least 3 hours or overnight.
  2. Preheat the oven to 180°C, fan 160°C, gas mark 4. Put the frozen fruits in a small pan with the mixed spice and the other half of the vanilla pod. Heat gently, stirring occasionally, until the fruit begins to soften.
  3. Sit the cored apples in a small baking dish, just big enough to hold them. Fill the holes with some of the forest fruits, then spoon the rest into the dish around the apples. Bake for 40 minutes or until the apples are soft.
  4. Remove the frozen yogurt from the freezer about 15 minutes before serving to allow it to soften, and serve with the apples and forest fruits.
