These easy fritters provide summery goodness in every bite, with the crisp, sweet pop of fresh sweetcorn and the mild meatiness of courgette. They’re great as either an everyday side dish or appetiser for a casual gathering.

Ingredients

Calorie controlled cooking spray

Courgette

220 g, coarsely grated

Corn on the cob, raw

145 g, husks removed

Spring Onions

25 g, chopped

Egg, whole, raw

1 medium, raw

Egg white, raw

1 individual

White Self Raising Flour

25 g

Feta Cheese

Instructions

  1. Put the courgette on a clean tea towel and squeeze out any excess liquid. Pat dry with kitchen paper.
  2. In a medium bowl, combine the courgette, sweetcorn, and spring onions. Make a well in the centre of the mixture. Add the egg and egg white, and stir with a fork until lightly beaten. Beat the flour into the egg mixture. Fold in the vegetables, and cheese, then season.
  3. Preheat an air-fryer, if necessary, to 200°C. Line the bottom of the air-fryer basket with parchment paper, and mist with cooking spray. Drop the courgette mixture by 2 tbsp into the air-fryer basket with a little space between each (you should be able to fit 4 to 6 fritters). Mist the tops of the fritters with cooking spray. Air-fry for 8-10 mins until browned and set. Lift out the cooked fritters with a metal spatula. Repeat process with the remaining courgette mixture.

Notes

Fresh corn definitely offers the best flavor and texture, but in a pinch you can use tinned. As you air-fry subsequent batches of fritters, you can keep the cooked ones warm in a 90°C oven; place on a wire rack in a sheet pan so they don’t get soggy on the bottom.
