Turkey burger with rice salad and salsa

Turkey Breast Mince, raw

125 g


1 medium, chopped

Chilli, green or red

1 individual, chopped

Parsley, fresh

Halve an aubergine and roast in the oven at 180° for 30 minutes. Allow to cool slightly then cut into cubes. Mix together turkey breast mince, chopped red onion, a small chilli and parsley. Shape into a pattie and grill for 8-10 minutes on each side. Cook brown rice and mix with chopped spring onion, the cubed aubergine, lemon juice and parsley. Make a salsa by combining chopped tomato, red onion, red pepper and lime juice.
