Mist a pan with cooking spray & fry the courgettes, spring onions & garlic cloves for 5 minutes. Add ginger, curry powder and cook for 2 minutes. Pour in 200ml vegetable stock. Bring to the boil, then simmer for 15-20 minutes. Add the spinach and coriander, cook for 2 minutes. Stir in lemon juice. Remove from the heat, then using a stick blender, blitz the soup until smooth. Ladle the soup into bowls, serve with yogurt & toasted cumin seeds.
