Notes

Add the rice to a pan of boiling water, cover and simmer for 25 minutes or until tender. Meanwhile mist a frying pan with cooking spray and add the onion. Fry, stirring for 3 minutes then add the garlic and fry for a further 1 minute.

Add the pork and fry for 3-4 minutes or until browned. Pour in the chicken stock and add the asparagus. Gently simmer for 5-8 minutes or until the pork is cooked through. Stir in the natural yogurt.

Drain the rice and arrange on a warm plate with the pork, vegetables and sauce.
