Notes

Bring a medium saucepan of water to the boil. Add the cauliflower and cook for about 5 minutes, until just tender. Be careful not to overcook it, as it will be stir-fried too, and needs to hold its shape. Drain well.Heat a non stick frying pan and cook the paratha from frozen, according to packet instructions. Set aside on a warm plate.Spray the frying pan with the cooking spray. Add the spring onions, pepper and chilli (if using) and stir-fry for 2–3 minutes, then add the cauliflower and spices. Cook for 2–3 minutes longer until the cauliflower is lightly browned.Add the paneer, stir through, then pile the mixture on top of the paratha. Sprinkle fresh coriander over the top, then serve with the lemon wedge, if using.
