Notes

Use a food processor to blitz mango flesh to a purée. Add the flesh and seeds of passion fruit. In a separate bowl, whisk egg whites until stiff. Gently fold in 0% fat natural Greek yogurt and half the purée. Layer the yogurt mix and purée and top with more passion fruit pulp. Serve immediately or chill for up to 6 hours.
