Fruit salad with lime dressing

Toast the cashews in a dry frying pan over a medium heat for 2-3 minutes, until fragrant and golden. Remove from the heat and roughly chop. Put the strawberries, blueberries and cherries into a serving bowl. In a separate small bowl, mix together the lime juice and zest with agave syrup, then add to the fruit and toss to coat. Divide the dressed fruit salad between bowls, scatter over the toasted cashews and fresh mint, then serve.
