Creamy spinach-stuffed chicken with veg

Preheat the oven to Gas Mark 6/200C/fan oven 180C.

Spray a non-stick frying pan with the cooking spray and cook the spinach with half the crushed garlic until wilted and quite dry. Tip the spinach out on to a chopping board, chop roughly and spread it out on a plate to cool.

Toss the courgettes and cherry tomatoes together with the thyme and the remaining garlic on a large baking tray. Season and spray with the cooking spray.

Season the quark with a little nutmeg and mix in the spinach. Cut a deep horizontal pocket in the chicken breast and spoon in a quarter of the stuffing. Wrap a slice of ham around the stuffed chicken breast and add to the tray with the vegetables. Spray the cooking spray.

Bake the chicken and vegetables for 20-25 mintues, until the vegetables are tender and the chicken breast is cooked through.
