Chicken with capers and lemon

Spray a small non stick frying pan with the cooking spray. Season the chicken breast and add to the pan over a medium-low heat. Cook for 10–15 minutes, turning regularly, until golden and cooked through. Remove the chicken to a serving plate and keep warm.

Return the frying pan to a low heat and add the lemon juice, zest and capers. Stir to deglaze the pan, then swirl in the low fat spread and 1 tablespoon of boiling water.

To serve, pour the lemon and caper sauce over the chicken. Serve with boiled potatoes.
