Baked potato with tuna, lime & coriander - serves 1

Preheat the oven to 220°C, fan 200°C, gas mark 7. Prick the potato all over with a fork, place on a plate and microwave on High (850W) for 2 mins. Turn it over and microwave for a further 2 mins or until tender. Transfer to a baking sheet and spray with cooking spray. Season and bake in the oven for 20 mins to crisp the skin. Mix the tuna with the lime juice, red pepper, cucumber and coriander . Slice the potato open, spoon over the tuna mix then serve with a green salad.
