On a baking sheet, spray a large sheet of foil with calorie controlled cooking spray. Add white fish fillet (eg haddock, cod, plaice), season and add fresh herbs or slices of lemon. Roll up the sides of the foil to make a sealed parcel and bake for about 10-20 minutes (depending on size of fillet) until fish flakes easily with a fork. Serve with quinoa and steamed green beans.
