Combine instant coffee with hot water and sugar, beat the mixture with a mixer, and watch it miraculously become thick, pale, fluffy, and voluminous—like coffee meringue. This concoction has been a hit on social media, but other recipes use a lot more sugar (equal parts coffee, water, and sugar in most versions). Our recipe calls for less sugar, but the mixture still whips up beautifully; it just doesn’t hold its peaks for as long as it would with more sugar.

Ingredients

Regular instant coffee powder

3 Tbsp

Water

3 Tbsp, hot

Sugar

4 tsp

Plain unsweetened almond milk

1½ cup(s)

Vanilla extract

Instructions

  1. In a medium bowl, combine coffee, hot water, and sugar. Beat with an electric mixer at low speed just until sugar dissolves, about 30 seconds. Gradually increase speed to high, beating until pale and thick and stiff peaks form, 1½ to 2 minutes.
  2. In a measuring cup, stir together almond milk and vanilla. Fill two (8- to 12-oz) glasses about ⅔ full with ice. Divide almond milk mixture evenly between glasses. Divide whipped coffee mixture evenly over top of milk.
  3. Serving size: 1 latte
