Ingredients

Watermelon

2 pound(s), seedless, rind removed, flesh cut into chunks

Kirby cucumber

2 average, or Persian variety, peeled, halved and sliced

Scallions

3 medium, thinly sliced

Red wine vinegar

3 Tbsp

Table salt

¼ tsp

Reduced fat feta cheese

¼ cup(s), crumbled

Instructions

  1. Mix together watermelon, cucumbers, scallions, vinegar, and salt in serving bowl. Let stand about 10 minutes. Sprinkle with feta and serve.
  2. Serving size: generous 1 cup

Notes

Mild Persian or crunchy Kirby cucumbers are a nice complement to the watermelon in this salad. Both varieties have mild skin and small seeds, so they can be used without peeling and seeding.
