What do you do when you have leftover watermelon? Make these delicious pops to keep in the freezer for when you need a sweet treat. You won't find an easier, more refreshing summertime dessert. And it couldn't be easier to make! All you have to do is blend the watermelon in a blender until it's liquefied. Stir in some fresh lemon juice and sugar, then divide among paper cups. Let them hang out for several hours in the freezer until the pops are solid. All you have to do is peel off the paper cups to serve them (you can also use ice pop molds if you have one handy).

Watermelon

Fresh lemon juice

4 Tbsp

Sugar

1 Tbsp, or honey

Instructions

  1. Cut flesh from watermelon rind and remove seeds. Blend flesh until liquid (you should have approximately 4 cups of liquid). Stir in lemon juice and sugar.
  2. Pour into 5 fluid ounce paper cups, leaving space at the top so they don't overflow. Stick a wooden popsicle stick into each cup. Freeze for several hours. To eat, just peel off paper cup.
