Similar in texture to salsa, this colorful, veggie-packed dip can be whipped up in just 15 minutes from start to finish and requires just 9 ingredients. most of which you may already have on hand. First, simply blitz the roasted red peppers, garlic, ginger, and Dijon mustard in a blender or food processor until smooth. Transfer to a bowl, then fold in the diced yellow peppers, fresh mushrooms, and basil, and your dip is ready to go. It really doesn't get much easier than that. Feel free to experiment with any other raw veggies and fresh herbs you may have on hand. Try this dip with fresh vegetable sticks, baked chips, or toasted pita wedges.


Roasted red peppers (packed in water)

24 oz

Garlic clove(s)

2 medium clove(s), minced

Dijon mustard

2 tsp

Table salt

tsp, or to taste

Black pepper

tsp, or to taste

Yellow pepper(s)

1 medium, diced

Fresh mushroom(s)

1 cup(s), diced

Ginger root

1 Tbsp, fresh, minced


¼ cup(s), fresh, chopped


  1. In a blender or food processor, combine roasted peppers, garlic, ginger and mustard. Purée until smooth; season to taste with salt and pepper.
  2. Transfer mixture to a large bowl and fold in remaining ingredients. Yields about 1/4 cup per serving.
