Very Veggie Vegetable Dip

Similar in texture to salsa, this colourful veggie-packed dip can be whipped up in minutes. Try it with fresh vegetable sticks, baked chips or toasted pita wedges.
roasted red peppers (packed in water)24 oz
garlic clove(s)2 clove(s), medium, minced
Dijon mustard2 tsp
table salt⅛ tsp, or to taste
black pepper⅛ tsp, or to taste
yellow pepper(s)1 medium, diced
fresh mushroom(s)1 cup(s), diced
ginger root1 Tbsp, fresh, minced
basil¼ cup(s), fresh, chopped
- In a blender or food processor, combine roasted peppers, garlic, ginger and mustard. Purée until smooth; season to taste with salt and pepper.
- Transfer mixture to a large bowl and fold in remaining ingredients. Yields about 1/4 cup per serving.
