These delicious, juicy turkey burgers come together in just 20 minutes and are the perfect, healthy weeknight recipe you'll find yourself reaching for again and again. They feature toasted pine nuts, spices like ground cinnamon and cumin, as well as onions, an egg white, and fresh tomato slices to help bring the burgers together. Just be sure to watch the patties as they broil, as broilers can vary wildly in intensity depending on what kind you have. And while this dish is flavorful enough to stand all on its own, a small scoop of baba ghanouj will complement it very nicely.

Pine nuts

Uncooked boneless skinless turkey breast

4 small, (6-inch each)

1 large, cut into 4 thick slices

Instructions

  1. Spray the broiler rack with nonstick spray; preheat the broiler.
  2. Place the pine nuts in a medium nonstick skillet over medium heat and cook, stirring frequently, until golden brown, about 4 minutes. Add the cumin and cinnamon and cook until fragrant, about 1 minute. Transfer to a large mixing bowl.
  3. Heat the oil in the same skillet over medium-high heat. Add the onion and cook, stirring constantly, until translucent, about 2 minutes. Add to the nuts in the bowl. Add the turkey, egg white, salt, and pepper and mix well. Form into 4 burgers.
  4. Arrange the burgers on the broiler rack; broil 4 inches from the heat until an instant-read thermometer inserted in the side of a burger registers 165°F, 5 – 6 minutes on each side. Serve the burgers in the pitas with a slice of tomato. Yields 1 burger per serving.
