If you don’t tell the kids, they’ll never know the carrots are in there. But even better, these carrots will keep this turkey meat loaf light and tender, adding more moisture as it bakes. You might want your slice with some hot deli mustard on the side; the kids will definitely want ketchup.

Cooking spray

Uncooked extra lean ground turkey breast

Shredded carrots

Whole wheat breadcrumbs

Egg whites

Dijon mustard

1 Tbsp

Onion powder

½ tsp

Garlic powder

½ tsp

Table salt

½ tsp

Worcestershire sauce

1 Tbsp

Instructions

  1. 1. Position rack in center of oven and preheat oven to 350°F. Spray a 9-x-13-inch baking pan with nonstick spray; set aside.
  2. 2. Mix ground turkey, carrots, bread crumbs, egg whites, mustard, onion powder, garlic powder and salt in a large bowl until fairly smooth. Form into a 10-inch oblong loaf with a flat bottom. Set in baking pan.
  3. 3. Smear meat loaf with Worcestershire sauce and bake about 1 hour, until meat loaf is brown and an instant-read meat thermometer inserted into center of loaf registers 165F. Cool for 5 minutes in the pan before slicing into 8 even slices.
  4. Serving size: 1 slice
