Sweet mango and canned black beans star in this quick-fix salsa that’s ideal to serve with grilled steak, chicken, or fish.

Ingredients

Red onion

1 medium, diced

Mango

1 large, peeled, pitted, and diced (to taste)

Red bell pepper

½ medium, seeded and diced

Frozen corn

½ cup(s), thawed or fresh

Canned black beans

½ cup(s), rinsed and drained

Fresh lime juice

2 Tbsp

Table salt

¼ tsp

Black pepper

tsp, freshly ground

Cilantro

2 Tbsp, or parsley, fresh and chopped

Instructions

  1. In a medium bowl, combine the onion, mango, bell pepper, corn, beans, lime juice, salt, and pepper. Let stand 5 minutes to allow the flavors to blend. Stir in the cilantro. Yields about 3/4 cup per serving.

Notes

Select mangoes with unblemished, yellow skin blushed with red. Ripe mangoes will yield to gentle pressure and emit a perfumed fragrance. Avoid fruit with shriveled or black-speckled skin.
