Tropical Bean Salsa

Sweet mango and canned black beans star in this quick-fix salsa that’s ideal to serve with grilled steak, chicken, or fish.
uncooked red onion(s)1 medium, diced
mango(es)1 large, peeled, pitted, and diced (to taste)
sweet red pepper(s)½ medium, seeded and diced
frozen corn kernels½ cup(s), thawed or fresh
canned black beans½ cup(s), rinsed and drained
fresh lime juice2 Tbsp
table salt¼ tsp
black pepper⅛ tsp, freshly ground
cilantro2 Tbsp, or parsley, fresh and chopped
- In a medium bowl, combine the onion, mango, bell pepper, corn, beans, lime juice, salt, and pepper. Let stand 5 minutes to allow the flavors to blend. Stir in the cilantro. Yields about 3/4 cup per serving.
