Tortilla Pinwheels

Like a chef’s salad rolled up in a tortilla, these pinwheels are a tasty treat.
Ingredients
Spinach
1 cup(s), torn, fresh
Tomato
½ medium, chopped
Onion
¼ small, thinly sliced
Apple cider vinegar
1½ tsp
Flour tortilla
2 tortilla(s), medium, (6 inch) fat-free
Low fat cream cheese
2 oz, or Neufchatel
Olives
6 olive(s), medium, Pimento-stuffed green olives, sliced
Extra lean sliced turkey ham
3 oz, sliced, fat-free
Instructions

Combine the spinach, tomato, onion, and vinegar in a medium bowl.

Heat each tortilla in a dry skillet until softened and warm. Stack the tortillas between sheets of paper towels and cover with plastic wrap to prevent drying; set aside.

Spread the cream cheese onto the tortillas. Top with the olives, then the spinach mixture and ham. Roll the tortillas tightly and cut each one into 6 pieces, making a total of 12 pinwheels. Serve at once, or refrigerate, covered, until ready to serve.
