Like a chef’s salad rolled up in a tortilla, these pinwheels are a tasty treat.

Ingredients

Spinach

1 cup(s), torn, fresh

Tomato

½ medium, chopped

Onion

¼ small, thinly sliced

Apple cider vinegar

1½ tsp

Flour tortilla

2 tortilla(s), medium, (6 inch) fat-free

Low fat cream cheese

2 oz, or Neufchatel

Olives

6 olive(s), medium, Pimento-stuffed green olives, sliced

Extra lean sliced turkey ham

3 oz, sliced, fat-free

Instructions

  1. Combine the spinach, tomato, onion, and vinegar in a medium bowl.
  2. Heat each tortilla in a dry skillet until softened and warm. Stack the tortillas between sheets of paper towels and cover with plastic wrap to prevent drying; set aside.
  3. Spread the cream cheese onto the tortillas. Top with the olives, then the spinach mixture and ham. Roll the tortillas tightly and cut each one into 6 pieces, making a total of 12 pinwheels. Serve at once, or refrigerate, covered, until ready to serve.

Notes

If you like, substitute sliced turkey breast for the ham. You can also use any leafy greens you have on hand in place of the spinach.
