To preserve the taste of the feta cheese, wait to sprinkle it on top until just before serving. To bulk it up, add sliced cucumbers, onions, and bell peppers. Ingredients

White balsamic vinegar

Plum tomato

2 medium, each cut into 6 wedges

Fresh basil

¼ cup(s), chopped fresh, or parsley

Fat free feta cheese

75 gm, (1/2 cup) crumbled

Instructions

  1. Stir together oil, vinegar, salt, and pepper in large bowl. Add cherry tomatoes, plum tomatoes, and basil and gently stir to combine. Toss in feta just before serving. Serve immediately or cover and refrigerate up to 4 hours.
