This fresh, savory fish taco is swimming in flavor. The shredded cabbage provides great crunch while the cheese mingles well with the seasoning and the salsa to deliver a delicious kick.

Ingredients

Uncooked tilapia fillet

16 oz, four 4 oz pieces

Shredded reduced fat Mexican-style cheese

4 oz

Cooking spray

Table salt

¼ tsp

Mexican seasoning blend

1 tsp

Corn tortilla

4 tortilla(s), medium

Shredded red cabbage

2 cup(s)

Salsa

½ cup(s)

Plain fat free Greek yogurt

Instructions

  1. Preheat oven broiler. Coat tilapia fillets with cooking spray. Sprinkle with salt and seasoning. Broil for 3 to 4 minutes, or until fish easily flakes.
  2. Lay tortillas out on your work surface. Place 1 fillet, ½ cup cabbage and 1 oz cheese in each tortilla. Fold up and serve each with 2 tbsp salad and 1 tbsp yogurt.
  3. Serving size: 1 tortilla
