Sweet Potato Topped with Curried Turkey

uncooked 99% fat-free ground turkey breast4 oz, or 98% fat-free
ginger root½ tsp, grated
fresh apple(s)⅓ cup(s), finely diced, divded
uncooked scallion(s)2 small, thin, sliced, divided
curry powder¾ tsp
table salt⅛ tsp
cooked sweet potato(es)1 medium, hot, split open
plain fat free Greek yogurt¼ cup(s)
cilantro1 Tbsp, chopped
- Coat a small nonstick skillet with cooking spray; heat over medium heat. Add turkey and ginger; cook over medium-high heat, breaking up turkey with a wooden spoon, until turkey is no longer pink, about 2 minutes.
- Add 1/4 c apple, half the scallions, and curry powder; cook, stirring, 1 minute to blend flavors.
- Season turkey mixture with salt and spoon over potato; top with yogurt, cilantro, remaining apple, and remaining scallions.
- Makes 1 serving.
