Sweet potato topped with curried turkey
Uncooked 99% fat-free ground turkey breast
4 oz, or 98% fat-free
½ tsp, grated
⅓ cup(s), finely diced, divded
2 small, thin, sliced, divided
Cooked sweet potato(es)
1 medium, hot, split open
Plain fat free Greek yogurt
1 Tbsp, chopped
- Coat a small nonstick skillet with cooking spray; heat over medium heat. Add turkey and ginger; cook over medium-high heat, breaking up turkey with a wooden spoon, until turkey is no longer pink, about 2 minutes.
- Add 1/4 c apple, half the scallions, and curry powder; cook, stirring, 1 minute to blend flavors.
- Season turkey mixture with salt and spoon over potato; top with yogurt, cilantro, remaining apple, and remaining scallions.
- Makes 1 serving.
