Sweet potato toast with banana, honey, and pecans

In this recipe for sweet potato toast with banana, honey, and pecans, you'll get the same filling, tasty breakfast—using a sweet potato instead of bread. Our suggested prep method of this classic dish-for-two takes 17 minutes to make, but you can also toast the sweet potato slices in a regular toaster, a toaster oven, or even a regular oven if you prefer. Just know that the cook times might vary if you cook the sweet potatoes differently, so double-check the texture before you pull 'em out!
Uncooked sweet potato(es)
4 oz, two 1/3-in-thick slices
1 small, thinly sliced
4 tsp, toasted
- Spray sweet potato slices lightly with cooking spray and season with salt. Toast on highest setting in toaster or toaster oven 2-3 times, until potatoes are lightly browned and fork tender (flip slices each time for even toasting).
- Drizzle each potato slice with 1 tsp honey, layer with bananas and garnish with cinnamon; sprinkle each with 2 tsp pecans. Serve immediately.
- Serving size: 1 piece toast
Do not spray cooking spray into toaster - lightly coat the potatoes away from the heat source.
