Sweet Potato Dip

Tastes just like sweet potato pie! Serve with baked pita chips and apple or pear slices. Swap cinnamon for the ginger if you prefer.
chickpeas (15 oz)1 ½ cup(s), loose skins removed, washed, drained
cooked sweet potato(es)1 cup(s), mashed*
packed light brown sugar¼ cup(s)
fresh orange juice½ cup(s)
orange zest1 tsp, finely minced
ginger root1 tsp, fresh, finely minced
- Combine all ingredients in a food processor or blender; blend until smooth. Allow to set up in refrigerator for about 30 minutes. Yields about 2 tablespoons plus 2 teaspoons per serving.
