Sugar-Roasted Plums with Balsamic and Rosemary

Your kids might not be thrilled with a dessert like this one, but almost every adult will be! The plums take on a sweet/sour finish that pairs beautifully with the rosemary. Make sure you mince those rosemary leaves into tiny bits, rocking a knife through them repeatedly on a cutting board.

- Position rack in center of oven; preheat oven to 400°F. Coat a 9-inch square baking dish with cooking spray.
- Place plums, cut-side up, in prepared pan. Drizzle plums with vinegar. Sprinkle brown sugar and rosemary over plums.
- Roast until sauce is bubbling and plums are tender, about 20 minutes.
Serving size: 2 plum halves.
