Ingredients

Mango chutney

cup(s), large pieces chopped

Rum

¾ fl oz, dark variety

Ground cinnamon

2 tsp

Table salt

1 tsp

Ground allspice

½ tsp

Black pepper

¼ tsp

Uncooked pork tenderloin

1 pound(s), trimmed

Instructions

  1. Spray grill rack with nonstick spray. Preheat grill to medium-high or prepare medium-high fire.
  2. To make glaze, stir together chutney and rum in small cup and set aside.
  3. Stir together cinnamon, salt, allspice, and pepper in another cup. Spread spice mixture all over tenderloin, and then lightly spray with nonstick spray. Place tenderloin on grill rack and grill, turning occasionally, 10 minutes.
  4. Continue to grill pork, turning and brushing with glaze, until instant-read thermometer inserted into center of pork registers 145°F, about 10 minutes longer. Transfer to cutting board and let rest 5 minutes. Cut into 12 slices.
  5. Serving size: 3 slices

Notes

To make a side, spray slices of eggplant or zucchini with olive-oil nonstick spray. Grill, turning occasionally, until tender, about 8 minutes.
