Mixing spaghetti with spiralized veggies is a great way to enjoy a bowl of pasta while boosting the vegetable content of your meal.

Ingredients

Cooking spray

4 spray(s)

Uncooked spaghetti

2 oz

Red pepper flakes

¼ tsp

Garlic

2 clove(s), thinly sliced

Marinara sauce

¾ cup(s)

Fresh zucchini spirals

4 cup(s)

Grated Parmesan cheese

Instructions

  1. Cook the spaghetti according to package directions; drain.
  2. Meanwhile, coat a large nonstick skillet with cooking spray and heat over medium-low. Add the red pepper flakes and garlic to the pan; cook until the garlic is golden brown and fragrant, about 2 minutes, stirring frequently. Stir in the marinara; bring to a boil. Increase heat to medium and add the zucchini; cook until the zucchini is thoroughly heated, 1 to 2 minutes. Stir in the drained spaghetti. Sprinkle with the cheese.
  3. Serving size: about 1 ½ cups

Notes

Store-bought marinara gets a flavor upgrade with a little toasted garlic, which adds surprisingly deep flavor.
