Soy tacos with jack cheese
10-inch high fiber, low carb flour tortilla(s)
1 small, chopped
Meatless soy crumbles
Reduced-fat shredded Monterey Jack cheese
1 head(s), chopped
1 medium, chopped
Black bean and corn salsa
1 Tbsp, fresh, chopped
- Coat a large nonstick skillet with cooking spray. Heat over medium-high heat; add onion. Cook, stirring, until onion is softened, about 2 minutes. Add soy crumbles; cook, stirring, until warm, about 2 minutes. Add salsa; cook, stirring, until heated through, about 2 minutes more.
- Warm tortillas according to package directions. Spread 1/4 of soy mixture down the middle of each tortilla. Top each with 2 tablespoons of cheese, 1/2 cup of lettuce and 1/4 of tomato; sprinkle with cilantro. Roll up envelope-style and serve.
