We've created a delicious variation on an all-time Mexican favorite with these tasty tacos. Soy crumbles take the place of traditional ground beef. Full of flavor and sauteed with the onions, the soy crumbles mimic the texture of beef to perfection. Find these soy crumbles in the frozen isle of your supermarket. Ready in a quick 30 minutes, each taco gets a hit of fresh crunch from lettuce and tomatoes, in addition to the hearty zest of the corn and black bean salsa. Perfect on their own, these tacos are also delicious when paired with some fresh sliced mango dressed with a hit of lime juice. Make them spicy with a small sprinkle of cayenne.

10" high fiber, low carb flour tortilla

Onion

1 small, chopped

Meatless soy crumbles

2 cup(s)

Reduced fat shredded Monterey Jack cheese

½ cup(s)

Romaine lettuce

1 large head(s), chopped

Tomato

1 medium, chopped

Black bean and corn salsa

Cilantro

1 Tbsp, fresh, chopped

Instructions

  1. Coat a large nonstick skillet with cooking spray. Heat over medium-high heat; add onion. Cook, stirring, until onion is softened, about 2 minutes. Add soy crumbles; cook, stirring, until warm, about 2 minutes. Add salsa; cook, stirring, until heated through, about 2 minutes more.
  2. Warm tortillas according to package directions. Spread 1/4 of soy mixture down the middle of each tortilla. Top each with 2 tablespoons of cheese, 1/2 cup of lettuce and 1/4 of tomato; sprinkle with cilantro. Roll up envelope-style and serve.
