Everyone loves the all-American Sloppy Joe. Our version features lean ground turkey seasoned with jalapeño, salsa, and hint of brown sugar. Children and adults will love this casual dish full of rich flavors. Adding a can of Mexican-style corn, often called Mexicorn, amps the veggies and the Southwestern flavors. Ready in just under 30 minutes, this dish is great for any night of the week and works well on full sized and slider buns. Add a crunchy green salad to round out the meal or steam up some broccoli to finish the plate. Take down the spice by substituting green bell pepper for the jalapeño or kick it up with your favorite hot sauce as a condiment.

Ingredients

Canola oil

1 Tbsp

Onion

1 medium, chopped

Garlic

1 clove(s), minced

Jalapeño pepper

1 small, seeded, chopped (wear gloves when handling to prevent irritation)

Chili powder

1 tsp

Dried oregano

½ tsp

Uncooked extra lean ground turkey breast

¾ pound(s)

Canned corn with red and green peppers

7 oz, with Mexican seasonings (also called mexicorn), rinsed and drained*

Salsa

1½ cup(s)

Dark brown sugar

1 Tbsp, packed

Light hamburger bun

Instructions

  1. Heat a large nonstick skillet over medium-high heat. Swirl in the oil, then add the onion, garlic, and jalapeño. Cook, stirring occasionally, until softened, about 4 minutes. Add the chili powder and oregano, and cook 1 minute more. Add the turkey and corn, and cook until the mixture is nearly dry, about 4 minutes. Stir in the salsa and sugar and cook, stirring occasionally, until slightly thickened and the turkey is cooked through, 4–5 minutes longer. Spoon over the opened rolls and serve.

Notes

*Mexican-style corn, sometimes labeled Mexicorn, is a mixture of corn kernels and bell peppers often flavored with mild Mexican spices, usually found next to regular canned corn in the grocery store.
