So tasty and satisfying, this adorable miniature egg sandwich is a protein powerhouse. Make a few at a time and keep them in the fridge for quick and easy snacking. For a little extra flavor, garnish with a bit of black pepper or smoked paprika. If you’re making a bunch of these for later, refrigerate them in a shallow but wide food container lined with slightly damp paper towels. They’ll help keep the egg bites upright and prevent them from sliding around.

Ingredients

Egg

1 item(s), large, hard-boiled and halved lengthwise

Deli sliced smoked turkey breast

½ oz, (1⁄2 slice)

Cherry tomatoes

1 medium, thinly sliced

Dijon mustard

½ tsp

Arugula

3 leaf/leaves, baby, or watercress sprigs

Instructions

  1. Top 1 egg half, cut-side up, with the turkey, folding the slice to fit. Top with the tomato.
  2. Spread the cut side of the remaining egg half with the mustard. Arrange the arugula on top of the mustard. Top the tomato slices with the egg half, arugula-side down. Secure the sandwich with a toothpick.
  3. Serving size: 1 egg sandwich
