Our version gets a hit of heat from crushed red pepper flakes which you can regulate up or down based on your palate. Make another variation by sprinkling smoked paprika over the egg in place of the pepper flakes or try with some fresh herbs if you like. Some supermarkets now carry small avocados that are just the right amount in place of having to store a cut avocado until the next day. This dish makes a great breakfast on the go. Simple wrap in wax paper for easy transport.
