Seasoned canned tomatoes and Italian turkey sausage add instant life to chili. Italian turkey sausage comes in different flavors such as mild, sweet, medium, and hot. Use whichever level of heat you prefer.

Ingredients

Uncooked turkey sausage

1 pound(s), hot-Italian variety

Canned pinto beans

15 oz, undrained

Canned diced tomatoes

14½ oz, with chilies, undrained

Canned diced tomatoes

14½ oz, with garlic and onions, undrained

Onion

1 medium, chopped

Table salt

¼ tsp, or more to taste

Black pepper

¼ tsp, or more to taste

Scallions

3 medium, thinly sliced, for serving

Instructions

  1. Remove sausage from casing and place in a 4-quart or larger slow cooker; break up meat with a spoon. Add beans, both cans of diced tomatoes with their liquid, and onion; stir.
  2. Cover slow cooker; cook on low setting for 5 to 6 hours. Stir in salt and pepper; garnish with chopped onion and/or scallion if desired and serve.
  3. Serving size: about 1 1/2 cups

Notes

Try tomatoes with different seasonings to vary the flavor of your recipe. If you really like your chili spicy, use two cans of diced tomatoes with chiles, or canned, diced fire-roasted tomatoes.
