Everyone’s favorite Indian takeout dish is now a slow cooker sensation. In less time that you would take to make the order, you can have your ingredients assembled in the slow cooker and ready to cook. Leave the house for work and come home to the tender chicken thighs, perfectly spiced and ready for the cooling yogurt. Serve over some basmati rice and a side of wilted baby spinach for added veggie presence. This recipe serves a crowd so you may have friends calling you for the take-out!

Canned crushed tomatoes

28 oz

Uncooked onion(s)

1 small, minced

Minced garlic

1 Tbsp

Ginger root

1 Tbsp, fresh, minced

Garam masala

2 Tbsp

Dark brown sugar

1 Tbsp

Ground cumin

½ tsp

Ground coriander

½ tsp

Uncooked boneless skinless chicken thigh(s)

2 pound(s)

Kosher salt

1 Tbsp

Plain lowfat Greek yogurt

½ cup(s)

¼ cup(s), fresh, chopped (optional)

  1. Combine all ingredients, except yogurt and cilantro, in 4- to 6-quart slow cooker. Cook on high for 3 to 4 hours or low for 6 to 8 hours. Stir in yogurt and cilantro. Yields about 1 cup chicken with sauce per serving.

Chicken thighs can hold up to a long, slow cook time - they may shred if left in for too long but the dish will still be just as delicious. You can easily double this recipe. It freezes well.
